So says Boris Ivan, the towering giant of a bar manager at Longitude 0’8, a kitschy, streamlined cocktail bar hidden away in Le Meridien Piccadilly hotel in central London.

Both Boris and the bar are not what you would expect to unearth in the heart of horrid, tacky tourist land. Walk in and you’ll discover a chic setting, decked out with white leather sofas and bright red bar stools, accented by green and grey walls filled with quirky, glass-framed military outfits. At first glance, you could fob it off as just another hotel bar in an upmarket establishment, with its pricey drinks and clean-cut American clientele. But peer beyond those initial judgements and you'll find something entirely different; a bar that those Londoners who love to be ‘in the know’ will inevitably swoon over once they discover its charms.

Boris took over at the bar last autumn, bringing with him the belief that guests are not only clients but friends, meant to be welcomed from the first moment they step through the doors. Previously of Hush and Sky Lounge, Boris said he was keen to put his own unique stamp on a place and so jumped at the offer to revitalise the space, which had previously been flagging.

His focus is on bringing less well known but high quality brands to the bar to give the cocktail drinker something to remember them by. Some bottles new to me included German gin Monkey 47 (made with 47 botanicals including lavender, which is thrown in during both the distillation and infusion processes) and FAIR vodka made from quinoa and sustainably sourced, Fairtrade ingredients.

The interest comes, he says, from his turnaround devotion to cocktails, which came soon after he arrived in London from Slovakia nine years ago. He came with the intention to study English, but soon after started working in a bar where he met award-winning mixologist and now Suntory brand ambassador Zoran Peric, who took him under his wing. Putting his degree in psychology and social work to the wayside, he gave in to his newfound love of cocktail making, specialising in Japanese mixology.

Outside of his love for providing odd bottlings behind the bar, Boris also specialises in barrel-aged cocktails. The bar had four mini oak barrels when I went, with various drinks elegantly marrying. He also makes infused alcohols, which sit on the front bar in alluring 1920s Art Deco bottles. These currently include a vanilla and ginger infused Beefeater gin and a Yamazaki 12 whisky blended with roasted almonds.

I tried a barrel-aged sangria; a heady, rich concoction of the most addictive kind. Made from a shot of aged sangria (composed of cognac, red wine, peaches, cherries, cinnamon and dried oranges), along with sugar, maraschino liqueur, orange juice, and a homemade maraschino cherry served in a crystal coupe glass, it was the best sangria I'd ever had. Each sip developed as it sat on my palate moving from sour orange and lemon, to bursts of bitter chocolate and cognac like a layered dessert.

The bar has also recently been exploring the idea of chocolate and drink matching (which it calls 'choctails'). Boris has sourced a small batch chocolatier to create truffles specifically for the bar. The three chocolates I ate each brought out something different in the sangria and really showed its variations of flavour. The milk chocolate, for instance, highlighted notes of cherry, while the white accentuated the citrus flavours in the drink. It was a mouth-watering tasting experience.

Another highlight of my cocktail afternoon included an Asian inspired bloody Mary made with lemongrass, chilli, sesame seed, ginger, vegetable bullion, vodka and sweet basil. It was almost meaty in its intensity but equally refreshing and zingy.

While Boris is keen to do something different, he says he always comes back to the classics. He makes a mean negroni, so do try it if you're not quite ready for the more off-the-wall creations.

Whatever you choose, I had the feeling Boris and his team will make anyone welcome. And that’s the real “cherry on top” of this place.
