1) It begins with apprehension; a Hotel Chocolat, cacao-themed restaurant in Borough Market; hmmm?! And yet, aside from the chocolate shop downstairs (ideal for gifts), and the brief introduction to cacao beans at your table, subtly is its guidance. There are no chocolate fondues or between-course chocolate cleansers here.

2) Hidden stairs rise to a wood-panelled restaurant reminiscent of an exotic shed in a faraway land. Suspend your disbelief; imagine the wilds of the cacao fields. Jungle noises in the toilets aid your creative shift.

3) A summery terrace overlooks the bustling market; the buzz emanating from below makes serious conversations difficult, so make them silly instead.

4) On balmy, non-market evenings the stillness is punctuated by the dull roar of distant traffic and trains rumbling overhead. Blankets keep you snug when the mood lures you deeper into the night.

5) Throw in a little candlelight (not literally) and it’s dangerously close to a romantic restaurant. Outside is for comfortable couples, officially dating, already kissed. Inside is “I’m interested but don’t know how to take it to first base, so maybe this intimate booth will help”. Tasting events also take place, and we all know how the brain reacts to chocolate.

6) Following an Aperol spritz that’s strong enough to incite work amnesia, challenge yourself to an indecisive nightmare: the addition of cacao to almost every dish changes a menu of standard ingredients into a troubling list of must-haves. Mash becomes more intriguing when preceded by the words “white chocolate” (although sides are probably unnecessary).

7) Despite mains of cacao-crusted pork and tamarind-ginger-cacao cod both consumed with confident consensus, the prologue and epilogue are the features of the show: the light, beautifully constructed asparagus with runny orange egg yolk starter is simplicity exemplified...
