Top 10 things we learnt when we visited the BYOC bar:

1) BYOC stands for “Bring Your Own Cocktail”, which isn’t strictly accurate – customers are actually asked to bring a bottle of their alcohol of choice, from which cocktails are assembled by trained mixologists, who think on their feet.

2) An odd concept, one might think – restaurants usually don’t ask customers to provide their own steak, for example – but BYOC manages to execute it with panache and a dash of intrigue.

3) The location helps to sell the premise no end – BYOC is housed is a tiny room underneath the sought-after Juice People bar near Covent Garden, which keeps the venue stocked with a formidable reserve of freshly-squeezed, organic juices and syrups.

4) Down a rickety staircase, the speakeasy atmosphere is dialled up to ten, with dim lighting, old timey music cranked out of a vintage gramophone, and intricate glasses and tankards hanging from the ceiling.

5) Seating is limited to a handful of booths and alcoves. Two-hour slots need to be booked in advance, and turnover is strictly enforced no matter how freely the drinks are flowing, so everyone can gain access over the course of the evening.

6) The main event is undeniably the antique trolley of herbs, spices, juices, syrups and potions which is wheeled from table to table by the affable barman, happy to elucidate on the bar’s ethos and MO (not on the contents of the “house syrup” though – there have to be some secrets after all).

7) Each drinking experience is unique, but our home-sourced, unremarkable bottle of vodka was transformed into refreshing and eye-opening concoctions using extracts of cucumber and yellow pepper.

8) A fair amount of guesswork and improvisation goes into each round of drinks. There’s only so much the barmen can do with the source material though, so customers trying to be clever with an obscure toffee absinthe shouldn’t be surprised to find that all their cocktails taste of toffee absinthe.

9) The intimate atmosphere is perfect for dates, small groups and ardent cocktails enthusiasts. Moreover, the room is so small that conversation, gossip and, quite often, alcohol ends up being freely exchanged between guests within no time.

10) The very nature of BYOC means that you can’t just pop in on a whim. But this fascinating venue remains extremely popular nonetheless – book in advance for a unique cocktail experience.
