Top 10 things you need to know about Arbutus restaurant:

1) Where’s the best restaurant in Soho to wine and dine if you’re a cool cat, a balding businessman, a roaring junior exec, or a pre-theatre mid-lifer? Well...

2) Arbutus shares a common gene with its sister restaurants, Wild Honey in Mayfair and Les Deux Salons in Covent Garden: each offers a diversely inspired wine list that’s entirely available by the carafe. Go on, poke that sense of discovery.

3) This inventive list is constantly refreshed, always breaking into new geographic territories. Plus, nearly all are organic or biodynamic, so wave goodbye to hangovers! The small batch, Bulgarian, Ivo Varbanov chardonnay: a crisp, oaky white wine for red wine drinkers. The Hungarian Bolyki merlot-cabernet smells of dusty tent, but its surprising lightness verges on pinot.

4) The menu’s suggested daily aperitif - for us, a cucumber, mint and London gin cocktail - is dangerously palatable. My guest could’ve downed hers in three sips. I almost did it in one.

5) The food menu is dated; in that, today’s date appears at the top, meaning no two days are ever the same.

6) The crisp pig’s head with sweet pickled turnip florette and pistachio is possibly the best starter I’ve ever eaten. It wasn’t mine, so I was forced to create a diversion to distract my guest, giving me time to switch it with the second best starter I’ve ever eaten: the squid and mackerel burger with Cornish razor clams.

7) Be brave; choose obscure menu options (unless you’re adamant about your vegetarianism). Your intrepid spirit will be rewarded. Lambs’ tripe and trotters; roast cod with chicken wings; or, the enticing thin waves of curled, spit roast Lebanese lamb, all Instagram posts waiting to happen.

8) The rich nectar of life, the quintessence of nirvana, it lies within a hot pan of gooey almond tart, a sizable dollop of ice cream and a timely pause courtesy of a lovely glass of Sauternes dessert wine.

9) To have held onto their Michelin star since 2007, chef Anthony Demetre and his business partner Will Smith - no, not that one - are proven experts. Using high quality, seasonal ingredients in unique ways, they’ve made this an inexpensive, unpretentious dining experience (look out for the pre-theatre menu for that-cant-be-right bargains).

10) Each visit is an odyssey into unchartered waters. Boundaries conquered. Risk all, and you shall have fresh adventures every time. This is Soho after all.

The wine list is concise but varied, offering good value for money. With about 25 reds, 25 whites, rosés and dessert wines the wine list covers all of the major wine growing regions of the world.

A unique feature of the list is that all the wines are available by a third of a bottle carafe (250ml). This allows diners the opportunity to sample several wines through the meal, and makes it easier to explore the list and to be tempted to try something new.
